Does anyone know how to get your foot in the door at a fine dining restaurant in Chicago?

I like working in the service industry, but would like to make more of a livable wage. I have a lot of experience, but have had no luck...is it really who you know?Does anyone know how to get your foot in the door at a fine dining restaurant in Chicago?
Put a really big spike on the front of your shoe, and make sure it's a wooden door! lol Seriously though, try to get a mangerial position if you have enough experience you should be able to get into it, especially in a big city like Chicago, there are probably new resturants opening all the time! Get in on the ground floor if you want to do really well! Try a site like www.craigslist.com and you'll be sure to find several leads. WHen you go to the interview just be clean and frank about what you expect from them as far as wages, and if your experience matches they'll be sure to consider you favorably! Also maybe try to chat it up with employees (the higher the position the better) at resteraunts you'd like to work at, make friends even! This way you may get the inside scoop, or leads about new positions opening before others even know! Most importantly of all stay positive! You should appear in person with your resume and letters of recommendation and your letter should state that your major goal in life is to eventually run/manage a top Chicago rest. Also personalize your letters noting awards the restaurant has won and why working there would be your dream job. Write things like you strive for excellence and want to learn from the best in the industry. Make sure your letters of reference are from restaurant management and or chefs, etc. If you can't get into fine dining, build up time at an extremely busy mid-level restaurant so you can at least say- I can handle havoc and a busy environment while keeping profess and level headed - now I want the best. I think it depends more on you work history and experience in what you are looking to be.
